Second Place: Super-Soft Chocolate Chip Cookies
Super-Soft Chocolate Chip Cookies
Makes 24 cookiesIngredients:
1 cup cold butter, cut into small chunks
1 1/4 cups brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups cake flour
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup milk chocolate chips (we like Ghiradelli)
1 cup semisweet chocolate chips
Instructions:
Preheat oven to 375 degrees. Line two baking sheets with parchment paper or a silicone mat.
In a mixer, beat the butter and sugars on high speed for 3 minutes or until the sugars have combined with the chunks of butter. Add eggs and vanilla and beat for 1 minute more.
Mix in the flours, baking soda, and salt. Stir in chocolate chips (You can do any combo of milk/dark/white/semisweet to equal 1 3/4 cup).
Make each dough ball around 1/4 cup sized. Place on the prepared cookie sheets, 2 inches apart (8 cookies per sheet). Keep the dough in the refrigerator until ready to prepare the next sheet.
Bake for about 10 minutes, or until cookies are just golden. Do not over bake. Let sit on the cookie sheet for 10 minutes before removing to a wire rack to cool completely. Enjoy!
